• 2 cups of Multi Millet Adai mix
• Water (as needed)
• Salt (to taste)
• 1 tsp mustard seeds
• 1 onion (finely chopped)
• 2 green chilies (finely chopped)
• 1/2 cup moringa leaves (optional)
• A few curry leaves (chopped)
• A handful of coriander leaves (chopped)
• 1-2 tbsp oil (for seasoning and cooking)
1. Prepare the Adai Mix:
• Take 2 cups of Multi Millet Adai mix in a large mixing bowl.
• Add salt to taste.
2. Add Water:
• Gradually add water to the Adai mix. Start with a small amount and add more as needed.
• Mix thoroughly to form a thick batter.
3. Soak the Batter:
• Cover the batter and let it soak for about 30 minutes. This allows the millet mix to absorb the water and soften.
4. Prepare Seasoning:
• Heat 1 tablespoon of oil in a small pan over medium heat.
• Add 1 teaspoon of mustard seeds. Let them splutter.
• Add the finely chopped onions, green chilies, curry leaves, and sauté until the onions turn translucent.
• Add the moringa leaves and sauté for a minute (if using).
5. Combine Seasoning with Batter:
• Add the sautéed mixture to the soaked batter.
• Add chopped coriander leaves and mix everything well to ensure an even distribution of ingredients.
6. Heat the Tawa:
• Heat a tawa or non-stick griddle over medium heat.
• Once hot, drizzle a few drops of oil and spread it evenly using a piece of cloth or a paper towel.
7. Prepare Adai Dosa:
• Pour a ladleful of the batter onto the center of the tawa.
• Spread the batter in a circular motion to form a thick dosa.
• Drizzle a few drops of oil around the edges of the adai.
8. Cook the Adai:
• Cook the adai on medium heat until the edges start to lift and the bottom turns golden brown.
• Flip the adai and cook the other side until it is also golden brown and crispy.
• Ensure both sides are cooked well.
9. Serve:
• Remove the cooked adai from the tawa and place it on a plate.
• Repeat the process with the remaining batter.
• Serve hot with chutney, sambar, or any side dish of your choice.
• Adjust the consistency of the batter by adding more water if it’s too thick.
• For extra flavor, you can add grated coconut or chopped vegetables like carrots and bell peppers to the batter.
• Maintain medium heat to ensure the adai cooks evenly and becomes crispy.
