Multi Millet Dosa mix, Water, Salt
Mustard seeds (optional), Urad dal (optional)
Onion (optional), Green chilies (optional)
Oil or ghee for cooking
Step 1: Soaking the Mix
1. Measure the Dosa Mix:
Take the desired amount of Multi Millet Dosa mix in a large mixing bowl.
2. Add Water:
Add enough water to the dosa mix. Use a ratio that the mix package suggests or enough to form a smooth batter. Generally, start with a 1:1 ratio of mix to water and adjust as needed.
3. Add Salt:
Add salt to taste and mix well.
4. Soak:
Cover the bowl and let the mixture soak for 4-5 hours. This allows the grains to absorb water and ferment slightly, enhancing the flavor and texture of the dosa.
Step 2: Preparing the Seasoning (Optional)
1. Heat Oil:
Heat a small amount of oil in a pan over medium heat.
2. Add Mustard Seeds:
Add mustard seeds and let them crackle.
3. Add Urad Dal:
Add urad dal and fry until it turns golden brown.
4. Add Onions and Chilies:
Add finely chopped onions and green chilies. Sauté until the onions are translucent.
5. Mix into Batter:
Allow the seasoning to cool slightly and then mix it into the soaked batter for added flavor and aroma.
Ensure the batter is of pouring consistency; adjust water if necessary.
Always stir the batter before pouring each dosa to ensure even consistency.
If the batter sticks to the tawa, sprinkle a few drops of water on the tawa and wipe it off with a cloth before pouring the next dosa.
Step 3: Making the Dosa
1. Heat the Tawa:
Heat a dosa tawa (griddle) on medium-high heat. Ensure it is evenly heated.
2. Grease the Tawa:
Lightly grease the tawa with a few drops of oil or ghee using a paper towel or a cut piece of onion.
3. Pour the Batter:
Pour a ladleful of batter onto the center of the tawa and spread it out in a circular motion to form a thin dosa.
4. Cook the Dosa:
Drizzle a few drops of oil or ghee around the edges of the dosa.
Cook until the edges start to lift and the bottom is golden brown. This usually takes about 2-3 minutes.
5. Flip (Optional):
If you prefer a crispy dosa, you can cook it only on one side. For a softer dosa, you can flip it and cook the other side for about 1 minute.
6. Serve:
Remove the dosa from the tawa and serve hot with your favorite chutney or sambar.
